Flounder Ceviche with Tequila Dressing
Super easy and super quick – gives you time to watch those darn commercials
recipe serves 4
7oz flounder fillet, super fresh – sliced paper thin
1/2 cup arugula
Dressing
2 tbl lemon juice
1 tbl tequila
1 tea sugar
Surf Salt of your choice
Combine dressing ingredients and stir
Lay slices of flounder on small cold appetizer dishes
Top with dressing and chill for 5 minutes
Serve wih arugula and sprinkle Surf Salt (I like Todos Santos or Kirra on this) over dish. Cheers!
