Heinz or Hunts?…Hellmann’s or Dukes?

What are ya? This is like Carolina or Duke, SERIOUS business in the south.

The sauce in the middle mixed with either is the glue that holds almost all working kitchens together. Poll one hundred chefs on what is their go to sauce and 99 will say either sriracha mayo or spicy ketchup. How much you use of each is up to you. Hellman’s all the way, EXCEPT on tomato sandwiches and Heinz all day long! There I said it.
