Ingredients (serves 4) Thai basil, 1 lemon, 1 pound baby bok choy, 1/4 cup sweetened sake (mirin), 4 tbls Waikiki Surf Salt, 1 avocado
Reserve avocado, basil and Surf Salt. In a large sheet of parchment paper (or foil) place bok choy, lemon wedges, sweet sake (and a 2 tablespoons of sesame oil if desired). Tightly fold into a package, use paper clips if necessary to hold together. You want the bok choy to steam inside the package. Cook at 350 for 13 minutes.
The package should be puffed, full of steam. Carefully open at the table and topbok choy with torn Thai basil, avocado wedges, and Waikiki Surf Salt. Add a squeeze of lemon as well.
