<p><strong>PEACH AND BASIL SLAW WITH WAIKIKI SURF SALT RECIPE</strong></p>
<p>serves 4</p>
<p>3 cups finely shredded cabbage</p>
<p>2 ripe peaches, thinly sliced</p>
<p>1 handful basil, rough chopped</p>
<p>4 tbl Waikiki Surf Salt</p>
<p>Toss cabbage, peaches and basil in bowl. Add dressing to taste, then top with Waikiki Surf Salt.</p>
<p><strong>dressing</strong></p>
<p>2 tbl extra virgin olive oil</p>
<p>2 tbl high quality fruit vinegar (apple, mango, etc)</p>
<p>2 tbl honey</p>
<p>1 tbl fat free Greek yogurt</p>
<p>Whisk all ingredients and keep cold.</p>

<p>During my time on the north shore of Oahu,  back in the day that is. I surfed, slept and ate basically two things. Tuna Poke and Loco Moco. Loco Moco is a ground beef patty, a fried egg, rice and brown gravy. If I had an extra long session or an extra heavy beat down, I would get a double loco moco, which is everything mentioned times two. It&#8217;s not for the faint of stomach.</p>
<p>Fast forward to the ripe age of 41. I must eat better than ever to stay afloat on my surfboard so I conjured up this&#8230;a fairly healthy version of the loco moco.</p>
<p>Here it is-</p>
<p>Grilled turkey burger glazed with Indonesian soy sauce</p>
<p>A farm egg fried in olive oil</p>
<p>Jasmine Rice</p>
<p>Red onions braised in cider then grilled</p>
<p>Cherry tomatoes marinated in mango vinegar</p>
<p>Sliced watermelon</p>
<p>Chopped cilantro</p>
<p>Waikiki Surf Salt</p>
<p>Ah now all I need is a Matsumoto Shave Ice!</p>

			<content:encoded><![CDATA[<p>Here is a great new way to use Surf Salt. By adding a small amount of olive oil, it turns any Surf Salt into a savory paste to put on foods (or makes a great dip for pitas as well).</p>
<p>Here is a simple baked potato I split in half and rubbed with olive oil and pepper. Cook it flesh side down at 375 for about 50 minutes.</p>

<p>Then combine 2 tbl Kirra (or other) Surf Salt with 2 tea olive oil. Spread this over potato and garnish with arugula tossed in a bit of good balsamic vinegar</p>

<p>Recipe</p>
<p>1 vidalia onion, sliced thin</p>
<p>3 tbl olive oil (or 3 slices of bacon, cooked until crispy and chopped)</p>
<p>pinch of pepper</p>
<p>2 tbl balsamic vinegar</p>
<p>1 cup fresh goat cheese, softened</p>
<p>1 cup cream cheese, softened (or all goat cheese if you want a stronger flavor)</p>
<p>4 tbls Kirra Surf Salt</p>
<p>Fresh torn basil, cilantro, or parsley</p>
<p>Heat the olive oil in a pan and add onions. Cook slowly until a deep golden brown. Add pepper and vinegar and cook until very dry. (Also good on steaks). Fold into cheeses and put in a serving dish. Top with Kirra Surf Salt and herbs. Serve with toast points.</p>
